
This Cupcake just screams "Summer" to me. The cake part was more dense than a normal cupcake. The flavor of lemon was light but pleasing to the palette. The frosting was over the
top yummy. A great addition to any brunch or bbq.

Today I made cupcakes from a box.. the internet said if I switched out butter for oil it would taste from "scratch". I was not totally convinced they tasted homemade. BUT they sure turned out pretty.. love the large sprinkles. Happy baking.
Fresh blueberry muffins
Fresh blueberry Muffins. Hy-Vee had fresh blueberries for 88 cents on sale this week. Who could resist.. right ?. So while scouring the internet for great blueberry muffin recipes I came across this one. The website said this muffin recipe is from 1896, sooo there has to be some thing there. S'more Cupcakes
Today I made S'more Cupcakes.. and the Cupcake part was made with graham crackers as the base and no flour.. Scott loved the cupcake with out the chocolate and marshmallow, Maddi and Cabin loved it with all the fixin'. The frosting was made with two large Hersey candy Bars and powdered sugar. here is the link for the Graham cracker cake.. It made 20 cupcakes and I baked them for about 16 minutes.

Strawberry Cupcakes
Today in Kansas city there was a Heat Advisory, the temperature was well over 100 degrees, and what do I decide to do is bake Strawberry cupcakes. God love my husband for letting me turn on the oven to 350 degrees at 2pm on a hot Saturday afternoon. The recipe is from Candace Nelson of Sprinkles Cupcakes fame. I think they turned out good. They sure are cute. Thanks Honey for letting me bake today.. love you.
Interesting facts about cupcakes
The name "cupcake" was used differently back in the 1800s. Then the name "cup cake" simply referred to a cake where the ingredients were 'measured' not 'weighed'. It seems that before the 1880s ingredients for cake baking were actually weighed so when recipes started to be given in 'cup' measurements, the cake recipes were named 'cup cakes' to reflect this difference. Greg Patent also tells us in his book 'Baking in America' that a woman named Mrs. Rorer (in 1902) was the first to actually print a recipe for the cupcakes (with frosting) we all enjoy today.
